Bryce Roholt

Bryce Roholt is the Farm Manager at the USU Animal Science Farm, overseeing operations for beef, swine, sheep, and goats. He is always willing to help faculty, staff, and students alike with their needs at the facility and goes out of his way to accommodate teaching, research, and Extension needs.

Since he began, the Utah State University beef herd has improved tremendously. He has put an emphasis on selecting proper genetics and working to improve the overall production of the herd, which has been beneficial in the quality cattle that are available for teaching and research needs. His passion for cattle production is evident to anyone who interacts with him. Bryce has hired several undergraduate student workers, providing them with valuable hands-on experience regarding all aspects of cattle production while also working through the nuances of caring for cattle that are being used for research.

While preparing for this year’s annual sheep shearing school, Bryce had the idea to use the lamb from the carcass class in the fall for the meals provided throughout the event. He then volunteered for the task of preparing the meat in a variety of different ways. He proved to be an excellent chef, serving tortellini lamb sausage soup, smoked lamb sandwiches, smoked leg of lamb, and grilled lamb chops. It was an innovative way to allow participants to experience lamb as a food source in many ways and to use our own USU product.

Bryce has been a wonderful addition to the South Farm and the ADVS department is lucky to be able to work with him.
