At the BUILD Dairy annual meeting, you will hear directly from 40+ students who will be presenting their dairy-industry prioritized research projects. You will also have opportunity to connect with University and dairy industry professionals.

Basic Cheese Making Short Course
Logan, Utah, USU's NDFS Department
A three-day class designed for the beginning cheese maker and those who have never made cheese before. The class will include an introduction to milk, cheese, dairy cultures and the steps in cheese making. Students will spend a day in the pilot plant making three varieties of cheese the old fashioned way by hand.

Advance Cheese Making Short Course
Logan, Utah, USU's NDFS Department
A four-day class for people who have cheese making experience and want to expand their knowledge of milk chemistry, cheese chemistry, curd handling and controlling cheese manufacture. This class will cover the basics of how to make cheese as well as a more in-depth exploration of the science of cheese making and flavor development of cheese. Students will spend two days in the pilot plant making several different varieties of cheese.

Washington State University Pasteurization and Advanced Cheese Making Classes

Pasteurization: This 2-day class on pasteurization covers vat, basic High Temperature Short Time (HTST) systems, and on the 3rd day Higher Heat Shorter Time (HHST) systems.
Advanced Cheese Making: Since 1986, the WSU Creamery has been presenting the Cheesemaking Short course. This
course is designed for experienced cheesemakers as well as supervisory, management, quality control, and marketing personnel from commercial/industrial plants.
