Dr. Abby Benninghoff has an open position for a graduate student research assistantship in nutrition science. This USDA-funded project will determine how lipid oxidation products from thermally abused oils in fried foods impact gut health and the microbiome. By studying these effects in healthy mice and a colitis-associated colorectal cancer model, we aim to uncover the mechanisms behind gut inflammation and cancer risk linked to dietary thermally abused oils, providing valuable insights for public health and dietary recommendations. Dr. Joana Pico is looking for an undergraduate research assistant for summer 2024 to assist in a project related to the determination of the antidiabetic properties of phenolic compounds. This position is part of the Utah Academy of Sciences, Arts, and Letters Symposium (UASAL) Summer 2024 Pilot Program, which focuses on funding entry-level research experiences for students in support of faculty-led research. The selected candidate will assist a PhD student in basic analytical operations of in vitro enzymatic analyses with starch sources. Candidates need to be currently enrolled in a BS degree at the NDFS program. Preference will be given to Food Science students. Undergraduate students from the BS in Chemistry, Biochemistry, Biological Engineering, Biotechnology, and Biology will also be accepted. See full job posting or contact Dr. Pico for more information.
